The chef

Oldani founded his first D'O restaurant in 2003 and the following year he received a Michelin star for cuisine based on tradition, but that never ceases to innovate, as a result of which, being simple, it always surprises. It is tasty, healthy, light and varied and also aims to offer high quality cuisine at an affordable price.

After working with some of the greats of Italian cuisine such as Gualtiero Marchesi, Davide Oldani has coined a style of his own that is defined as “cucina pop” (pop cuisine), with these basic precepts:


The Decalogue of Cucina POP

1. The importance of the balance of contrasts, in the kitchen and in life.
2. In the art of cooking, design is the container that needs to enhance the content.
3. Every business must be profitable, but prices must be honest.
4. Curiosity and observation are the best tools for understanding and interpreting the needs of your guests.
5. There is an opportunity in every mistake, you just have to look for it.
6. The health and well-being of your customers is one of the chef's priorities.
7. Every ingredient, from the most modest to the most exclusive, deserves the same respect and treatment.
8. Wine must be served in the right amount, neither too little nor too much.
9. Never buy food when you are hungry, you will reduce waste.
10. A brand should be easy to remember and make an impact.


Davide Oldani has several restaurants in Italy and Asia, has written books and newspaper articles on cooking, collaborated with universities and television programmes and has been an advertising image for various brands.
